Azuki BeansWaterSplendaa pinch of salt
Open bag of Azuki Beans, put in a big pot. Cover thoroughly with water. Put to boil in low flame. This will take a while.
Please check from time to time to see if the water is all absorbed. I like my anko mushy. I mean REALLY mushy. So, once the water is all absorbed, I add more water, and repeat the process a few more times until bean is the consistency I want.
Afterwards, put the whole concoction in a food processor (if desired), put splenda to taste, a pinch of salt, and mix.
If you would like, add a splash of milk or coconut milk on top prior to serving
