Ham, Spinach, Onion & Mushroom Breakfast Omelette

Ingredients
2 Large Eggs1/2 c. diced ham1 c. fresh spinach leaves1/4 c. chopped onion1/2 c. sliced mushrooms3/4 c. swiss cheese1/4 c. Fresh salsa (optional)
Directions
Mix all ingredients together in a bowl omitting the cheese. Put in omelette pan, cover & cook until bottom is brown and middle is almost set (not runny). Add cheese and fold over. Serve with salsa & a bowl of chilled fruit. Yummy!

Makes 1 omelette.
