Mashed Spiced Sweet Potatoes

6 large sweet potatoes, peeled and cubed1/4 cup lowfat vanilla soy milk1 tsp vanilla extract3 tbsp pure maple syrup2-3 tsp salt1 tbsp ground cinnamon1 tsp ground nutmeg1 tsp ground cloves1 tsp ginger
1) Rinse cubed sweet potatoes in water and place in pot with enough water to cover them and salt. Boil until they become tender and are easily pierced with a fork.
2) Drain and place back in pot over very low heat. Pour in soy milk, maple syrup, vanilla extract, and spices and mash potatoes until smooth.
3) If you like your mashed sweet potatoes wetter, add a little more soy milk.
4) Serve and enjoy!
