New Years "Good Luck" Soup

Ingredients
1 Pound lean ground turkey1 (6 oz) box Long Grain and Wild Rice with Seasoning 2 (15 oz) cans black eyed peas drained2 (14.5 oz) cans diced tomatoes with juice2 (14 oz) cans low sodium chicken broth2 cups waterSalt (if desired)
Directions
Serving Size = 8-10 (small bowl's worth)

Directions:
1.) Crumble turkey into a large pot over medium heat and cook until evenly browned.
2.) Once turkey is complete add rice mix with seasoning packet, black eyed peas, tomatoes, broth and water. Bring to a boil. Lower heat to "low", simmer for approx 15-20 minutes or until rice is tender. Season with salt (if desired)

3.) Enjoy on New Years, on a cold day or whenever.

    I made a dish similar to this one with stewed tomatoes which adds more flavor. Add a little hot sauce or salsa, if you like some more heat. Also, turkey sausage and beef broth is very good or Boca soy crumbles and vegetable broth for a vegetarian dish. - 2/2/10
