1 cup whole wheat flour1 cup bran1/4 cup wheat germ1/4 Bob's Red Mill 8 grain cereal3 over-ripe bananas, mashed1/2 cup unsweetened applesauce1/4 cup skim milk1 egg1/4 cup brown sugar1tsp vanilla1tsp cinnamon1/2 tsp nutmeg1/2 tsp ginger1 tsp baking powder1 tsp baking soda1/4 tsp salt1/2 cup mini chocolate chips
Preheat oven to 350 degrees. In a large bowl, mash bananas. Add milk, applesauce, egg, sugar and vanilla. Mix until well-combined. In a separate bowl, combine flour, bran, wheat germ, 8 grain cereal, cinnamon, nutmeg, ginger, baking powder, baking soda and salt. Whisk to combine dry ingredients. Pour dry ingredients into wet ingredients and stir until just moistened. Fold in chocolate chips.
Pour batter into prepared muffin cups. Bake at 350 degrees 20-25 minutes or until a toothpick inserted in the center comes out clean.
