Ingredients
Directions
Olive Oil, 3 tbsp Turkey breast meat, 1 slice (3-1/2" square)Beef, top sirloin, 1 piece, cooked, excluding refuse Ground beef, extra lean, 16 oz Carrots, raw, 2 carrot (7-1/2") Onions, raw, 2 cup, chopped *Yambean (jicama), 1 cup slicedParsley, 1 cup Canned Tomatoes, 2 can Beans, white, 4 cup Water, tap, 3 cup (8 fl oz) *Pork Sausage, 1 link (raw dimensions: 4" long x 7/8 Garlic, 4 tsp Salt, 1 tbspcumin, 2 tbsppaprika, 2 tbspblack pepper, 1 tbsp
In a large pot (cast iron is preferable but not required), high heat, smoke the oil, then add onion, carrots, jicama, parsley, garlic. Allow the vegetables to soften. Add in sausage (this is approximately half a cup of raw, loose smoked breakfast sausage...just enough for flavor), roast beef, turkey breast, and cook for about 5 mins. Add ground beef and brown. Do not drain. Add both cans of tomato, both cans of beans, stir. Add water according to your preference. If you want it thick, it won't need any. After 5 more mins of cooking, add seasonings and stir. Reduce heat and allow to simmer for 20-30 mins. Makes 10 2 cup servings.
Note: You may add more vegetables if you like. Whenever I make this, I throw in the vegetables in the recipe, and whatever is in my fridge leftover from the week of making dinner. You can add other meats, such as diced ham, as well but that is at your own risk if you are watching calories and fat. When I make this, it is different every time, but the ingredients listed in the recipe are a minimum. If you prefer to use a ready made chili seasoning instead of the spices in the recipie, make sure there is no salt in the ingredients on the packet. There are a few brands that don't include salt. Enjoy!
