Vegan Casserole

1 lb pasta (any shape--whole wheat or white)3 cups plain soymilk1/4 cup flour (white or wheat)2 yellow onions2 tbs vegetable oil (to sautee onions)1/2 package frozen spinach1/2 cup frozen peasVegan breadcrumbsSalt and pepper to taste
Preheat oven to 375 degrees.
Cook pasta in a big pot until al dente. Drain and set aside.
In a small pot, bring 3 cups soymilk to a boil. Add spinach and peas, lower heat, and leave to simmer until spinach is cooked.
In the meantime, finely chop 2 yellow onions. Put 2 tbs oil in a saucepan, add onions, and sautee for 2 minutes. Stir in the flour, then add in the milk and vegetable mixture. Add salt and pepper. Stir until creamy.
Put pasta in a casserole dish and pour cream sauce over. Sprinkle vegan breadcrumbs on top. Sliver vegan butter (Earth Balance) on top (optional). Cook for 20 minutes at 375 degrees.
Makes 5 big, hearty servings. Enjoy!
