Ingredients
1 c. Chickpea flour1 c. + 1 Tbsp. water3/4 tsp. Salt1/4 tsp. White Pepper1 1/2 Tbsp. Olive Oil
Directions
Preheat the oven to broil. Raise the rack to highest position. Put a cast iron low-sided skillet (plaque) in the oven to heat.

Pour the cold water into a pot and use a whisk to mix in the olive oil and salt, beating thoroughly to remove any lumps. The trick is in the batter, which should be slightly more runny than typical crepe batter.

Lightly oil the plaque. Pour the batter through a conical colander onto the plaque, covering it evenly.

Slide the plaque into the preheated oven and cook until the top browns nicely, possibly even going black where the bubbles rise.

Remove, slice and serve hot, peppering to taste.

    I usually make 2 thinner socca from this recipe and let the batter ferment for 8 hours. Try pouring the ingredients into a jar, seal tightly and shake till mixed thoroughly. - 8/9/12

    This is a very good source of protein for those who are trying to get more protein from plant-based items. You can serve it with tapanade, with hummus, and in other ways as well. You can add herbs and use flavored olive oils too. - 8/18/12
