Introduction

Ingredients

    2 Eggs small well beaten
    1 tbsp. sugar
    1/8 tsp. salt
    1/2 cup flour
    1 1/3 cup 2% milk
    2 tbsp. butter unsalted melted
    1 tbsp. orange peel grated

    For Orange Sauce

    1/4 cup butter soften
    1/4 cup sugar
    1/2 cup Splenda(25 tsp.)
    1 egg small beaten
    1/2 cup orange juice(fresh or frozen)
    1 tbsp. orange peel grated


Directions

1.Beat eggs add sugar and salt. Continue beating
add flour alternely with milk and butter add
orange peel. Batter will very thin.
2. Bake pancake in lightly greased griddle.
3. Use a scant 1/4 cup batter per pancake spread
as thin as possible. Each cake should be five to six inches in diameter. Brown first side then turn and brown lightly the other side. Keep warm.

Orange Sauce

Combine all ingredients in a small saucepan.
Cook over low heat until it comes to a boil, stirring
constantly.
Fold crepes and add to sauce,keep strirring till nicely covered and warm. Serve two Crepes per
person. Makes 12 crepes,or six servings.
P/S very nice with added fruit on the side like
Blueberries or raspberries.

    Delicious! I substituted egg beaters for the egg and Splenda for the sugar. I also rolled the crepes with a little bit of orange marmalade inside. - 11/9/08

    I'd add STEVIA vs. Splenda, and only to taste, as the OJ would add a layer of sweetness. - 2/12/19
