Indian Masala Omelet

Ingredients
1 tsp sunflower oil1/2 small red onion, very finely diced1 plum tomato, seeded and very finely diced1 jalapeno, deseeded and thinly slicedpinch of turmeric1/2 tsp cumin seeds2 Tbsp chopped cilantro leaves2 large eggs, lightly beaten1/2 tsp salt
Directions
Heat the oil in a medium, nonstick frying pan. Mix together all the ingredients and pour into the pan. Cook over medium heat for 3-4 minutes, or until the base of the omelet is lightly browned. With a spatula, carefully fold over the omelet, press it down lightly with the spatula and cook for 2-3 minutes. Flip over the omelet and cook for another 2-3 minutes or until it is cooked to your liking. Remove from heat and serve immediately with warm crusty bread or roll it up in a warm chapati.
