Baked Chicken Cacciatore with rice

Ingredients
- 2 chicken breasts, boneless and skinless- 1/4 cup onion, chopped- 2 Tbsp oil- 1 clove garlic, minced- 1/2 cup green pepper, diced- 1 cup spaghetti sauce- 1 1/2 cup chicken broth, hot- 1 tsp basil- 1 bay leaf- 1 cup brown rice (uncooked; makes 4 cooked cups)
Directions
- preheat oven to 350F
- brown chicken in oil, then add garlic and saute for a minute
- place chicken and garlic in casserole dish
- saute green pepper and onion until tender in remaining oil from chicken; place vegetables over chicken
- combine tomato sauce, broth, and herbs; once mixed, pour over chicken and vegetables
- cover and bake for 1 1/2 to 2 hours
- serve over brown rice
