Corn Bread Pudding

1 cup frozen corn kernels (thawed)1 (17 oz.) can cream style corn2 tbsp. unsalted butter (melted)8 oz. Sour Cream, Light or Fat Free1/2 cup eggbeaters1 pkg. Jiffy corn muffin mix1/2 cup unsweetened applesauce
Makes 10 - 3/4 cup servings.
Mix together all ingredients in a medium sized bowl.
Spray a 12"x12" baking dish with non-stick cooking spray of your choice.
Pour mixture into baking dish.
Bake at 350 degrees for one (1) hour.
Top should be golden brown with a slight crackled appearance.
Serve warm - will be slightly gooey in the middle.

My family really liked this, especially since the applesauce made it a little sweet. I used a can of no-salt creamed corn, so I added a teaspoon of onion salt for a little more flavor. I also used canola oil instead of the butter, to reduce the cholesterol. I'll definitely make this one again! - 2/21/10
