Hearty Low Sodium Minestrone Soup

8 oz elbow macaroni1 medium onion3 stalks of celery1 tbsp crushed garlic2 14.5-oz cans low sodium diced tomatoes2 small potatoes2 large carrots1 medium zucchini1 15oz can garbanzo beans1-1/2 cups diced cooked chicken32 oz low sodium chicken broth*1-1/2 tbsp dried basil1/2 tsp white pepper**1/2 tsp black pepper* Add more chicken broth for a thinner soup.** White pepper can be omitted for a milder flavor.
Chop vegetables and chicken into bite-size pieces, and add to a large soup pot along with chicken broth. Add herbs and spices, stir, then add enough water to cover. Bring to a boil, then turn down to low heat and simmer for 30 minutes. Add elbow macaroni and stir well. Continue to simmer for 15 more minutes, or until potatoes are fork-tender and pasta is cooked to an "al dente" state.
Makes about 16 hearty 1-cup servings of soup.
