Pasta Con Broccoli

Ingredients
16 oz. medium shell pasta (1 box)4 cups of fat free half & half8 Tbsp of light butter (1 stick)2 tsp. garlic salt8 Tbsp. tomato sauce2 cups of frozen broccoli2 cups of fresh mushrooms1 cup of grated parmesan cheesesalt & pepper to taste
Directions
1. Cook noodles until half done; strain off water and put back into pot

2. Add fat free half & half, light butter, garlic salt, tomato sauce and broccoli; bring to a hard boil (stir: careful not to burn the bottom)

3. When Pasta is fully cooked add mushrooms and stir into the pasta mixture.

4. Remove from heat and add the parmesan cheese.

5. Add salt & Pepper to taste. Toss & serve. Makes 8 servings

    This is a delicious recipe. My store didn't have light butter so I subbed 1/2 butter and 1/2 Smart Balance, and it turned out really good. Next time I will probably double the amount of broccoli, but otherwise this is a very flavorful recipe. - 7/27/10
