Brunchy Sausage Casserole

1 lb ground mild sausage2 cups shredded hash brown potatoes8 large eggs1/4 cup skim milk1/2 tsp ground black pepper1-1/2 cups shredded cheddar cheese, divided
Crumble & cook sausage in skillet until no longer pink, drain off grease. While sausage is cooking, place hash browns in 2 qt ungreased casserole dish. Bake in oven for 10 minutes to thaw and lightly brown. Remove from oven. Stir in drained sausage and 3/4 cup of the cheese. Beat eggs, milk and pepper in another bowl til well blended. Pour over sausage and potatoes, stir to combine. Sprinkle remaining cheese over top of sausage mixture. Cover with foil or oven-proof lid for casserole dish. Bake in 375 degree oven for 20 minutes. Uncover and bake another 20 minutes, until cheese on top starts to brown lightlyand center is set. Cool 10 minutes before cutting into slices or wedges. Makes 8 servings, approximately 1/2 cup per wedge.
