This is from the Martha Stewart Every Day Food mag, Jan 09. I think I tweaked it a little. My kids absolutely LOVED this one - my 6 yo dd gave it a 'full body thumbs up.' My ds said it looks like party food! lol!!!Beets -3 small, shredded and rinsedCarrot - 1 large, shreddedBeet tops - 1-2 cups, finely slicedDijon mustard - 2 tspRed Wine vinegar - 2TOrange juice - 1/4 cLight Olive oil - 1T
After you grate the beets, rinse them under cold water till the water runs clear.
Combine all the ingredients and toss.
Let stand for between 15 min and an hour to marry the flavours.
