Easy Dopiaza Chicken Curry

1 jar Palak's Dopiaza Curry sauce (check your "asian" or "world foods" aisle)1 lb. of Boneless, Skinless Chicken Breast1 bag of frozen peas and carrots1 box of Near East Chicken and Garlic riceButter
Cut boneless chicken breast into cubes. In the crockpot, stir chicken, 1/3 of the jar of Dopiaza Curry Sauce, and a pad of butter. Put the rest of the sauce in the fridge for now. Cook on high for 1.5 hours, or until JUST done.
Turn to low and remove the cooked cubes of chicken into a bowl, leaving the sauce and the water that cooked from the meat in the crock. Cover the hot chicken with the rest of the sauce, cover with loose foil, place in the fridge.
Empty bag of frozen peas and carrots into the crockpot. Cook on low for up to 2 hours.
30 minutes before dinnertime, begin the rice as noted on the package. This is the time to put the chicken back in the crockpot with all of the sauce, stir, and simmer; this prevents the sauce from losing flavor as it would if you left it in for the entire time.
When the rice is done, your chicken should be hot again. Serve chicken and veggies over rice, or beside. Voila!
