Asian 3 Bean Salad

1lb green beans, washed, trimmed and cut into 1 inch pieces10 bag frozen shelled edamame (green soy beans)15 oz can black beans3 Tlb Canola Oil3 Tlb rice wine vinegar1/4 c 100% fruit peach preserves2 green onions, sliced1 tsp sugar1 tsp freshly grated ginger, optionalsalt to taste
Place green beans and frozen edamame in a steamer basket and steam for 4 minutes. (I don't have a steamer, so I put them in a collander over boiling water, and I cooked them much longer than 4 minutes).
Turn beans into bowl and refrigerate to cool for 15 minutes or longer.
In a small bowl, whisk together oil, sugar, vinegar, preserves and ginger (if using).
Add scallions and black beans to other beans, drizzle dressing over, toss lightly and salt if desired.
6 servings, approx 1 cup each
