Cauliflower & Blue Cheese Soup

Ingredients
4 cups chopped cauliflower1 tbsp fresh or dried chopped chives (optional)1 oz blue vein cheese (use up the white end) OR 1tbsp parmesan1 tsp salt1/4 tsp black pepper
Directions
Cover chopped cauliflower with just enough water to cook, add salt to taste. Bring to the boil and simmer until tender . DO NOT drain the water. Mash the cauliflower in the water and/or process until smooth or desired consistency. Add pepper, chives and crumbled blue cheese. Reheat to a simmer then serve. Serves 4 as a lunch or 6 as an entree.
