oven fried eggplant

Ingredients
1 eggplant (about a pound) and slice into rings1/2 C 2% milk2 large egg whites1/2 C Jiffy cornbread mix2 Tbsp. garlic poweder1 Tbsp. black pepper1 Tbsp. chili powder
Directions
slice eggplant into 1/4 inch slices, should get 12 -13 slices mix milk and egg whites together in a bowl, mix dry ingredients together in a separate bowl. dip slices in milk/egg wash and press into dry ingredients (make sure you bread both sides). my cookie sheet held six slices so I used two cookie sheets.
I set my kitchen timer for 15 minutes, but after five I flipped them over for another five. then I shut off the oven for the last five. I cooked mine at 400 but I think 350 might be better. just keep a good watch on them. the chili powder gave them a kick, so you might want to try 1/2 tbsp. this was my first try at oven fried eggplant, so I am open to suggestions.
