Vegan Manhattan Clam Chowder

Ingredients
* Red Potato, 300 grams (remove) * *Kitchen Basics Vegetable Stock, 8 cup (remove) * Celery, raw, 3 stalk, medium (7-1/2" - 8" long) (remove) * Carrots, raw, 2 cup, chopped (remove) * Onions, raw, 1 medium (2-1/2" dia) (remove) * Garlic, 4 cloves (remove) * *Del Monte Petite Cut Diced Tomatoes, 2 cup (remove) * *Heinz Tomato Puree, 16 oz) (remove) 1 pkg light firm tofu, pressed, frozen, thawed, diced, and optionally roasted with some old bay and wine (remove) * White Wine, 4 fl oz (remove)2t dried thyme1 t granulated garlic1 t granulated onion1t dried oregna2T old bay2T sugar
Directions
start with the stock in the stock pot, add carrots, celery, onion, potatoes, garlic, and thyme. boil.
add granulated garlic, onion, oregano, and half of the old bay, and all of the tomato product. boil.

add tofu, wine, sugar, and boil again.
simmer until potatoes are tender. then add the rest of the old bay and the salt and pepper.
