Low Fat Fettuccini Recipe

Ingredients
1 package of Fettuccini Noodles (Spinach or other)3/4 cup of Light Sour Cream1 egg yolk (might be able to use egg substitute)5 heaping tablespoons of Locatelli Grated CheeseGround Pepper to suit taste
Directions
Bring 6 quarts of water to a boil, adding noodles once the water comes to a rolling boil and cooking to package directions (aldente works best).

While water is boiling, take the large egg and separate white from yolk, mix yolk into 3/4 cup of sour cream and put aside until noodles are done; drain noodles well, than mix with the sour cream/egg, sprinkling the cheese in while mixing and serve immediately, while hot. Add ground fresh pepper to suit taste.

Can also use this to make a bag of french style stringbeans into a meal. . .

Makes about 6 to 8 servings of about one cup.
