Chicken and Mushroom stir fry

Ingredients
- 1 tbsp of olive oil- 300 g of Mushrom Stir Fry Mix (50% vegetables: cabbage, carrots, peppers, onion) 50% beansprouts and cut mushrooms- 3 boneless skinless chicken breasts- 100g Plum and Hoisin Stir Fry Sauce
Directions
Makes 4 1-cup servings

1- Cut chicken in 1 inch size cubes
2- Warm olive oil in a wok.
3- Fry chicken in olive oil stirring to ensure it is fully cooked
4- Add the Mushroom Stir Fry Mix, stir continuously for 2-3 minutes.
5- Add Plum and Hoisin Stir Fry Sauce and stir in low heat for 1 minute

Serve immediately.
Can be served with boiled rice or noodles

Alternatives:
Replace the mushroom stir fry mix with any mix of vegetables
Replace the Plum and Hoisin Stir Fry Sauce with Soy, Teriyaki or similar sauce
