Indian Inspired Lentil Soup

1/4 cup olive oil1 medium onions, chopped medium fine3 cloves garlic, mincedabout 1 inch ginger root, peeled and grated3 teaspoons mustard seeds3 teaspoons cumin seeds2 teaspoons coriander seeds2 teaspoons turmeric2 teaspoons fenugreek powder1 teaspoon ground pepper2 teaspoons salt or to taste1 cups red lentils1/3 can coconut milk (light coconut milk is fine)1 tomato4 carrots1 can chicken broth or vegetable stock, about 5 cups water 1 lemon
Heat oil and saute onion until tender. Add garlic and ginger and cook for about a minute. Then add the spices and let them heat up for a minute or two. Next, add the lentils, coconut milk, broth, tomato, carrots, and water. Let simmer about 45 minutes. Add lemon juice. Season further to taste.
Makes about 6-8 1 cup servings.
Note: Soup can be blended for a different consistency.
