Basic Vegetable Soup

Ingredients
1 pound of frozen soup or frozen mixed vegetables4 cups chicken stock2 cups diced tomatoes2 tablespoons tomato paste1/2 cup chopped onion1/4 cup chopped celery1 tsp. dried parsleysale and pepper to taste
Directions
Add all ingredients to a 4-5 quart pot. Bring to a boil, reduce heat and simmer for one hour.

This works well in the pressure cooker too. Cook on high for 10- - 15 minutes, depending on how tender you prefer your vegetables.

Makes 8 one cup servings.
