Veggie grounds, spiced up with salsa

* *Yves Veggie Ground Round - Original, 2 cup or 340 g * President's choice Mango and Lime Salsa, 430 ml * Mixed Vegetables, frozen, 1 cup * Onions, raw, 1 cup, chopped * Garlic, 1 tsp * Ginger Root, 1 tsp * *Coriander powder, 1 tbsp * *Cumin powder, 1 tbsp * *Tumeric, 1 tsp * Cider Vinegar, 2 tbsp * Chili powder, 1 tsp * Olive Oil, 2 tbsp
Fry onions in olive oil till soft. Add garlic and ginger and fry 2 minutes.
In a separate bowl Add all other ingredients (except salsa and frozen vegetables).and mix well. Add to onion mixture on stove and heat well for 5 minute. Stirring as needed. Add up to one cup of water if mixture sticks or gets dry.
Add salsa and frozen vegetables. Bring to boil, then lower heat and simmer for another 5- 10 minutes.
Serve over pasta or brown rice
