potato 1 medeggs 4 medturkey bacon 4 slices1 medium onioncarrots 2 ozbrocolli florets 2 ozgrape tomatoes 2 oz.4 oz can mushroomscanola oil 2 tbspfresh salsa 1 tbspminced garlic 1 tbspmilk 1% 1oz
chop all vegetables & turkey bacon into bite size pieces. Heat frying pan adding canola oil. when pan heats add potatoes, garlic, onion, carrots,brocolli & mushrooms. cook for 10-12 minutes until potatoes are tender. add salsa, egg and grape tomatoes. When eggs are done, serve

Very Good! I didn't quite have all the ingredients and ended up substituting the broccoli for zucchini, chopped canned tomatoes instead of the grape tomatoes and used 3 egg whites plus 2 whole eggs. Thoroughly enjoyed. Thanks for the recipe, it's exactly what I was looking for this morning!! - 1/30/10
