Shrimp and Bok Choy Stir Fry

Directions
Per serving:4 oz. of shrimp 1 c. bok choy1/4 c. onions2 cloves garlic1 tbs. low sodium soy sauce1/2 tbs. Extra Virgin Olive Oildash of ground ginger (if using fresh you can use much more)1 c. brown rice
Prepare rice (can be boiled with veggie broth for more flavor)
Chop up Bok Choy (if not using baby)
Chop onions, crush garlic.
In a pan or wok add EVOO, once warm add garlic, bok choy, and onion. Saute until wilted. Add shrimp and 1/2 of soy sauce and saute until pink. Add prepared rice, rest of soy sauce and saute for 1 minute until very hot.
Serve and enjoy :)
