Oven Baked Onion Rings

1/4 cup + 2 Tbsp. all-purpose flour1/2 tsp salt1/8 tsp cayenne pepper1 large Spanish onion, but into 1/4" slices3 egg whites, lightly beaten3/4 cup plain dry breadcrumbs
Preheat the oven to 400 degrees; spray a nonstick cookie sheet with nonstick cooking spray. On a sheet of wax paper, combine the flour, salt and cayenne pepper.
Separate the onions into rings, but keep them in groups of two, one ring inside the other. Dredge the rings in the seasoned flour, then dip in the egg whites and then coat in the bread crumbs; place on the baking sheet. Bake on the top oven rack until browned, about 10 minutes. Turn the onion rings and bake until browned, 5-10 minutes.
