Ingredients
Marinade:3/4 cup raw soybeans 3/4 cup raw wheat berries (both cooked until tender, then cooled)1 tsp dill1/4 tsp dry mustard1/2 cup cider vinegar1/2 cup mayonnaise4 tbsp lime juice1/4 tsp basil2 Tbsp white wine1/2 cup fresh parsley, chopped2 cloves garlic, crushed1 scallion, diced1 carrot, diced1 cucumber, diced1 red onion, diced1 green pepper, diced1 stalk celery, diced1 cup cottage cheese (2%)
Directions
Combine marinade ingredients, add beans & berries and let marinade for 15-20 minutes.
Combine all ingredients.
Toss and serve
