Crispy Eggplant Rounds

Ingredients
1 med. eggplant1/2 cup Italian seasoned breadcrumbs1/4 cup grated parmesan cheese2 Tbsp. olive oil
Directions
Cut eggplant into 1/2 inch slices. Combine bread crumbs and parmesan cheese in shallow dish. Brush eggplant with olive oil, then dredge in bread crumb mixture. Place on baking sheet that has been sprayed with cooking spray. Bake in a pre-heated 450 degree oven for 15 minutes, turning once halfway through baking time, until golden brown.

    To cut some calories I used cooking spray instead of olive. Was very good but olive oil would have probably made it a little better. - 3/11/10

    I've always loved fried eggplant but wanted a baked recipe instead. This was perfect and delicious! I've had my husband try many different eggplant recipes and he couldn't stand them. He actually really liked this! - 1/19/09
