Slow Cooker Winter Fruit Compote

1 c. cranberry juice1/2 c. granulated sugar1/2 c. creme de cassis1 tbsp grated orange zest2 tsp grated lemon zest1 cinnamon stick2 tbsp unsalted butter3 large, ripe pears, peeled and cut into 1/2-inch dice1/2 c. dried apricots, halved1/2 c. dried cranberries
1. Combine cranberry juice, sugar, creme, zests, and cinnamon stick in a saucepan. Bring to a boil over medium-high heat, stirring to dissolve sugar. Pour mixture into slow cooker.
2. Stir in butter, pears, apricots, and cranberries. Cook on low 4-6 hours (or high 2-3 hours) or until pears are tender. Discard cinnamon stick. Serve hot/warm over ice cream.
