Chicken Cacciatore

Ingredients
3 chicken breasts. (1-1/2 whole breasts)- skinless and boneless1-28 oz or 2- 14 oz cans of cooked tomatoes1 medium sliced onion1/4 cup olive oil1/2 cup fresh parlsey, finely chopped1 tsp dried basil1 tsp salt1 tsp dried rosemary1 tsp dried oregano1 garlic clove, minced1 tsp black pepper 1 tsp crushed red pepper1 cup sliced mushrooms
Directions
Brown the deboned skinless chicken breasts in the olive oil.

Remove the chicken and add onions. Cook until soft.
Add the remaining ingredients.
Cut the chicken into chunks and add back.

Simmer uncovered for 40-45 min.
