Chocolate Chip Chickpea Cookies

Ingredients
1 cup packed brown sugar3/4 cup butter2 eggs2 tsp vanilla1 can chickpeas1 1/2 cups chocolate chips2 cups all purpose flour1/2 cup old fashioned oats1 tsp baking soda1/4 tsp salt
Directions
Coat a baking sheet with cooking spary. In a large bowl, withelectric mixer, beat the chickpeas until they are broken up and forming a paste. Add sugar and butter, mixing until smooth. Beat in the eggs and vanilla. Next add the flour, oats, baking soda and mix until a thick dough forms. Add Chocolate chips and mix on low speed. Drop the dough onto baking sheet and bake at 350 F, for 11 to 13 minutes, DO NOT OVERBAKE. Store in airtight container for up to 4 days.
