Grilled Italian Vegetable and Cheese Sandwich

Ingredients
2 slices whole wheat bread1 pat butter2 1 oz slices mozzarella cheese (from skim milk)half a roma tomato, sliced1 mushroom, thinly slicedhalf a small garlic clove, thinly sliced.75 bell pepper, thinly slicedpinch of parsley
Directions
Heat skillet. Spread the butter on one side of each slice of bread. Add one slice of cheese to the dry side of the bread. Sprinkle garlic over slice of cheese. Layer tomato slices, mushrooms, and bell pepper over cheese. Add a dash of parsley and them top with other slice of cheese and bread with dry side down. When bread is golden, flip sandwich and toast other side. Personally, I like to have the sandwich assembled and then transfer it to the pan to help the cheese melt, but it can be made either way.
