Spinach Stuffed Chicken

1/3 C Water3 T Kraft Roasted Red Pepper Italian Dressing2 C Chopped Fresh Spinach2/3 C Stove Top for Chicken (in a canister)1/4 C Chopped Roasted Red Peppers2 Boneless, Skinless Chicken Breasts1 C 2% Shredded Mozzarella Cheese (or Pepperjack)
Pre-heat oven to 350 degrees.
Bring water & 2 T dressing to a boil in a large skillet on med-high heat.
Stir in spinach, stuffing & peppers; cover.
Remove from heat and let stand for 5 minutes until all liquid is absorbed.
Fillet chicken breasts in half and pound to 1/4" thick.
Spoon mixture on to chicken, starting at the short end roll tightly and place seam side down in a casserole dish sprayed with Pam. Repeat with remaining three pieces of chicken.
Brush with remaining dressing and bake for 35 minutes.
Remove from oven and sprinkle with cheese, bake for another 5 minutes or until cheese is melted.
