Minestrone Soup

Ingredients
1 large onion, chopped, 3 T olive oil, 2 celery ribs, chopped, 2 med carrots, chopped, 1 cup chopped cabbage, 1 med green pepper, chopped, 1 med. zucchini, chopped, 6 garlic cloves, minced, 3.5 cups water, 2 cans diced tomatoes (14-1/2 oz) undrained, 1 can (15 oz) garbanzo beans (rinsed and drained), 1 can (15oz) tomatoe puree, 1 can tomato sauce, 3 T dried parsley flakes, 2 tsp dried basil, 2 tsp dried oregano, 1 tsp salt, 1/2tsp pepper, 1/4tsp cayenne pepper, 1/2 c small pasta shells, fresh basil leaves and parmesan cheese (optional)
Directions
Saute onion in oil for 2 mins. Add clelery, carrots, cabbage, green pepper, zucchini and garlic; saute 3 more minutes. Stir in water, tomatoes, beans, tomato puree, tomato sauce and seasonings. Bring to a boil. Reduce heat; cover and simmer for 15 mins. Stir in pasta; cook 12-15 minutes longer or until tender. Garnish each serving with basil and cheese if desired.
