squash casserole

Ingredients
4 cups sliced zucchini4 cups summer squash sliced4 cups eggplant cubed1 cup sun dried tomatoes diced8 tbs extra virgin olive oil8 tbs. shredded parmeseancooking spray
Directions
Add all ingredients in a bowl toss to coat, add more or less olive oil and parmesean to taste if desired.Put in casserole dish coated with cooking spray . Cook in 400 degree oven for 30-45 minutes or untill outsides of veggies turn brown.
