2 egg vegetable omelete

Ingredients
2 large eggs 1 tablespoon sweet red pepper chopped fine1 tablespoon chopped onion1/2 cup sliced mushrooms 1/2 cup chopped spinach1 tablespoon light extra virgin olive oil
Directions
saute vegetables in oil till soft, remove from pan add beaten eggs and spread till almost set , place vegetables on center of eggs, and fold over sides, place on plate, add some parsley for garnish, some whole grain toast and enjoy!
