Easy Egg Salad

4 Hard Boiled Eggs, cooled and diced1 Tsp of Dijon Mustard (or yellow mustard)1 Tbsp of Light MayoSalt & Pepper to taste
Place 4 eggs in a pot and cover with cold water. Boil approx. 10-15 min for hard boiled eggs. Turn off burner and allow eggs to cool on stovetop in pot. Once eggs and water are cool to touch, run the eggs under cold water and peel. Dice eggs or slice w/ an egg slicer. Add salt and pepper to taste, mustard and mayo. Combine. Chill in the refrigerator and serve stuffed in romaine lettuce leaves or on top of a lettuce salad mix or on bread.
