6 ears sweet yellow corn2 Poblano chiles1/2 red onion2 red jalapenos1/3 cup chopped cilantro1 Tablespoon lime juicesalt and pepper to taste
Roast the corn and poblano chilies on BBQ and let cool. Cut corn off the ears. Dice the chilies, jalapenos, onion, and cilantro. Combine all ingredients and season to taste.
