Sweet Chili - Slow Cooker

Ingredients
1 can 19oz chickpeas, drained and rinsed1 can 19oz red kedney beans or black beans, drained and rinsed1 can 28oz tomatoes with herbs chopped1 can 10oz corn kernels, drainedmushrooms, as many as you like2 large cloves garlic, minced1 red onion, finely chopped1 cup ketchup1/4 cup liquid honey3 tbsp chili powder1/2 tsp cayenne pepper1 green pepper, diced1 red bell pepper, diced1 yellow pepper, dicedSour creamCheddar cheese, grated
Directions
In slow cooker, combine chickpeas, kidney beans, tomatoes, corn, mushrooms, garlic and red onion. In a bowl combine ketchup, honey, chili powder and cayenne; mix well and pour into slow cooker. Stir mixture to combine.

Cook and cover on LOW for 8 to 10 hours or on HIGH for 4 to 6 hours, until hot and bubbling. Add green, red & yellow pepper and cook on HIGH for an additional 20 to 25 minutes. Serve in bowls with a dollop of sur cream and grated Cheddar Cheese
