Winter Minestrone Soup (No Bacon)

1tsp flora buttery1 large onion, chopped100g chunk chorizo, chopped into small squares2 large carrots, chopped1 medium potato, chopped2 garlic cloves, crushed or chopped800g canned tomatoes, chopped3 oxo cubes, dissolved in 1 litre boiling water1 tsp dried sage50g dried pasta400g can haricot beans
Makes 7 servings
Melt the flora in a pan and add the onions and chorizo, fry for about 5 minutes until the onion is starting to brown. Tip in the carrots, celery, potato and garlic, stir well and cook for a few minutes.
Add the tomatoes , stock and sage and bring to the boil. Reduce heat to simmer and cook for 30 minutes. Drain and rinse the beans and add to the pan with the pasta. Cook for a furhter 10 minutes and season with salt and black pepper.
