Roasted Balsamic Beets and Potatoes

Ingredients
10 small beets5 medium new or red potatoes4 cloves garlic, peeled2 tbsp. balsamic vinegar1 tbsp. olive oil1 tsp. dried marjoramSea salt and pepper to taste
Directions
Add all ingredients to a large baking pan or casserole dish. Cook at 400F for 45 - 60 min. or until the potatoes and beets are tender.

    2 hours in the oven and beets were still not cooked. Perhaps the beets should be roasted on their own at a higher temp for the 1st hour. - 9/5/10
