Chicken Fajita Salad

1 serving of John Soules Chicken Breast for Fajitas1 /2 cup Birds Eye Pepper Stir-fry (or fresh Red Bell Peppers, Green Peppers and Onions)1 cup Romain Lettuce1 Plum Tomato1 oz Part Skim Mozzarella2 Tbsp SalsaJuice of 1 Lime1 Tbsp Sour Cream (Optional)
Spray a pan with an olive oil spray. Add in Pepper stir-fry or fresh peppers and onions and cook until they are softened
Add in chicken and cook until chicken is heated. I like to cook my peppers and onions until they start browning a bit.
As the chicken is cooking, put lettuce in a larger bowl and cut up plum tomato and put on top of lettuce.
When chicken and peppers are finished cooking, add in juice of one lime and listen to the sizzle!
Put chicken and pepper mix on top of lettuce and tomato in bowl. Sprinkle Mozzarella cheese on top. Add in salsa and sour cream.
