Ranch Baked Red Potatoes

5 medium red potatoes (1 lb. 3 oz.)1 tbsp. extra virgin olive oil1 tbsp. Hidden Valley Ranch Salad Dressing Mix (original, not buttermilk recipe)
With the skin intact, cut the potatoes into cubes (less than 1" across).
In a large Zip-loc bag, combine salad dressing mix and olive oil.
Put potatoes in bag and shake until oil covers all potatoes.
Place potatoes on a baking sheet and bake at 450 for 20-35 minutes.
Baking time will depend upon the thickness of the potato cubes and how crispy you want the potatoes. Check them at 20 mins. and every 5 mins. thereafter.
Nutritional info is for 2 large servings, but this could easily be stretched to 3 medium servings.
