Shrimp & Veggie Salsa Stir Fry

Ingredients
16 oz bag frozen precooked tail on shrimp (fresh shrimp will work too)1 Zucchini1 Yellow summer squash1 c. mushrooms1 medium red bell pepper (any color will work)1 bag of prewashed baby spinach2 garlic cloves1 c. salsa1 tbsp Olive oil
Directions
Thaw shrimp according to instructions

Chop veggies into bite size pieces and saute in oil all veggies except spinach. When veggies are slightly tender, add salsa and spinach.

When spinach is cooked, add thawed cooked shrimp and let cook for 2 more minutes.

Serve with brown rice or your favorite chips. (I like it with Stacy's Naked Pita Chips.)
