Chicken and Barley Broth

Ingredients
* Olive Oil, 1 tbsp * Onions, raw, 2 cup, chopped * Leeks, 1 leek * Carrots, raw, 500 grams * Barley, pearled, raw, 100 grams * Chicken Stock Cube, 3 * Chicken Breast, no skin, 500 grams * Celery, raw, 2 stalk, large (11"-12" long) * Seasoning, 1 serving * Mixed Herbs, 1 serving
Directions

Dice Chicken, Season with little salt and black pepper, fry in oil and set aside
In remaining oil and juices put all of the chopped vegetables, season and sauté for 5 mins.
Dissolve stock cubes in 750ml hot water and add to pan
Add herbs and Barley and bring to the boil.
Add chicken back in and simmer for 90 mins or until barley cooked.
Keeps well refrigerated for several days
