Spanish-Style Porkchops

Ingredients
4 pork chops, breaded and fried1 cup onion, chopped1/2 cup bell pepper, chopped2 Tbsp. vegetable oil1 cup chicken broth1 can diced tomatoes with green chiles1 package spanish rice mix
Directions
Brown pork chops on each side. Add oil, onions and bell pepper. Cook for 5 minutes or until soft. Add chicken broth and let simmer.

In a separate pan, prepare rice according to package instructions, adding diced tomatoes. Once rice is done, add to pan with pork chops. Let simmer 10 minutes and serve.

Makes 4 servings of 1 pork chop and 1.25 cups of rice mixture.
