Susan's Spinach Lentil Soup

6 oz smoked chicken sausage1 cup onion chopped1 clove garlic minced1/2 t. fennel seed1/2 t. red pepper flakes (opt)1 lb. dry lentils, picked over and rinsed3 T. chicken soup base or bouillon2 qts water1 10oz boxes frozen chopped spinachParmesian cheese for garnish.
Sayte' sausage, onion, and garlic in a Dutch oven. Add fennel and red pepper flakes and stir. Stir in soup base and dry lentils and toss until everything is coated. Add water. Bring to a boil. Reduce heat, cover, and simmer for 30 to 45 mins. or until lentils are tender. Add spinach and cook an additional 10minutes to heat through. Sprinkle with Parmesian cheese, if desired.
